How much volume do you think 20 lbs of pureed bananas would take up. Or any ideas on pounds per gallon?

As far as volume I am not sure, but about 3-4 lbs / gal should be good plus sugar to get a ferment. Look up Jack Keller wine recipe for bananas http://winemaking.jackkeller.net/recipes.asp" onclick="window.open(this.href);return false;" rel="nofollow. Also I wouldn't recommend puree because all that fine material is a real pain to separate out of the ferment when its done. Banana's just don't settle good. You can just slice them up to make that easier, then pour through strain bag or cheesecloth.

If you didn't have I wouldn't purée them if I didn't have to it is so hard to get the pulp out. The first time I ran it Threw a fine metal strainer with my sump pump and cotton cloth and still had enough pulp in my still to blow my stack just becare full and have fun

4 lbs of Banana's per gallon should get you about 6.5% without Sugar. from what I've read approx 102.5 grams of sugar per pound.
Only way to drink all day... is to start in the morning
