I just started my journey as a home distiller, and first I would like to thank all the contributors to this forum for all their expert advice. My very first ferment was a 10 gallon wash to make Odin's Corn Flakes Whiskey (thanks Odin!). It was bubbling like crazy after only 2h. I waited 2 weeks, then siphoned the wine into my new pot still (3 inch head on a 13 gallon boiler), and fired up my propane burner. After collecting and discarding 400 ml of foreshots, I collected 14, 1-pint fractions, aired them out overnight, measured their ABV, and diluted them to ~40% for tasting. Kept ~1.5 gal of backset aside, and started a new 10 gallon ferment. First 4 pints of heads, and jars 13 and 14 (tails) were relegated to the feints jug, and jars 5-12 were pooled, yielding about a gallon of 55% product. Kept some aside to drink "white", and added JD oak chips to the rest. After only 2 weeks, it tasted FANTASTIC. After a month, I filtered it through 2 layers of coffee filters, and bottled it. I didn't dilute it. I am utterly amazed at how awesome it tastes now, especially since it was my very first attempt. I plan to start experimenting with some of the other "tried and true" recipes- since I'm a real Bourbon and corn whiskey fan, I'll make some of the popular (hence probably very delicious) UJSSM, and a sweet feed whiskey. This winter, I can play around with some all-grain mashes, too, since I have some beer brewing experience and equipment.
