How much sugar

Bear with me i'm not real bright. I am using corn meal and sugarfor mash. Traditionally 10# of each for 5 gallon bucket. I am moving up to 30 gallon barrel. Lalvin 1118 yeast. Anyone have thoughts on how to get maximal yield? Is 10# each to 5 gallon best? I don't think i can do brix since i am using corn meal.
