I have about 5 gallons of homemade, bottled Apfelwine. It's about 2 years old and of good quality but I just don't like it. I made it using 6 gallons of pure apple juice,sugar,raisins and Montrachet Champagne yeast.
Is there any reason I shouldn't just pop the bottles open and run it?

Once you turn it to brandy you can't go back. But if you don't like it now why would you want to go back? Try it and see.

I first got started distilling after overshooting my Brix on about 240 liters of plum wine. It was an amateur mistake that I wouldn't make again, but it was one of my first efforts, you know.
So the wine sucked bigtime, but the brandy I made from it was absolutely marvelous.
Definitely, go for it.
