while getting things set up for my first all grain attempt my nephew stopped by with some apples. so of course I start doing the math in my head for a calvados. then I got thinking. why not add some peeled and cored apples to the bourbon mash? I am sure this is not an original idea, has anybody tried and have a good balance between apple and whiskey? For a 5 gallon recipe I was thinking of adding 8 pounds of apple to the pot, that should be roughly like adding 2lbs of sugar for specific gravity but hoping it will not over power the bourbon taste.
Just wondered if anyone has tried this and could recommend what would be too much of something.

crickets eh?
my thoughts ... a bourbon mash is a chore that I'd rather not risk by adding apples to . If it was me, I'd make some bourbon, and then make some apple brandy ...then enjoy the apple brandy while waitin for the bourbon.

My thoughts... Since it's your first all grain, I wouldn't add the apples.
If you do and it doesn't work out there's no way of telling if the all grain didn't work right or it was the apples.
I'd do two runs and then try blending a small sample. If you like it, you can always experiment with a grain/apple batch in the future.

I third the thought of not mixing. I just did a rye whiskey and a ujssm seperately 7 gallons each in the fermenters I ran 5 gallons each and saved out 2 gallons of each to mix in the still with all the feints. I liked it mixed after distilling so now I will see if I like them distilled together if yes again I will try fermenting them together. I am waiting for my mother in law to go home from her christmas visit to do my mixed run, she doesn't need to know what I like to do with my spare time.
