First time aging on oak

Well took some WPF that has been on chard J.D chips for about a week, cut it down to 30% in a baby food jar.Then run it thru a coffee filter took a good sip hmmmm not as good as it was 2 days on.It had a little bitter mid and after taste and chalky wtf!!! Had some things to do so I stuck it in the fridge 7 hrs later I pulled it out and took a look at it hmmm not filtered good enough.There was a little bit of char dust in the bottom of the jar so I took a sip WOW what a difference.The bitter taste and chalkiness was gone.I guess it"s like the old man said when I was kid you don"t know shit yet boy.I know this was probably a basic deduction for most, but if I had not done that tasting the way I did I very well may have let this sit a couple months and only filtered once.What a disappointment that may have been I now know run it thru a couple filters and maybe let it sit in the fridge over nite and filter again. :think:

The WPF is only a couple weeks old she only been on oak for about 7 to 8 days.I know it"s a bit early to tell much but damn it is dark compared to commercial stuff I have on hand.She should be some damn good stuff in 6 months.
