Your favorite Grain Bill

So I've jumped off the AG bridge and swimming well. Whats your favorite grain bill and why? Looking to try them all!

Per gallon of water:
2 lb cracked corn
1/4 lb malted red wheat
1/4 lb malted rye
A dash more malted rye
I will heat up the corn slowly. When the temp gets to 115°F I will toss in a handful of malted rye to help keep viscosity down. It really makes a difference.
I really like this grain bill cause it produces bold bourbon that has a spicy and slightly fruity flavor. It stands on its own neat or with ice. I also like it with my home made ginger ale.
Man, now I'm gonna have to go an fix myself a MitchyBourbon. Damn I hate when that happens!!!

I am using 15 lbs corn 10 lbs malted red wheat and 5 lbs oats. Got one more batch to strip then I'll do a spirit run but there is promise there.

I call this one the Irish Indian, well becase i am Irish & Cherokee. my friends love it, it's there favorite. 10 lbs. 2 row malt, 5 lbs Munich malt, 5 lbs crimped oats & 1 lb choclate malt. aged on heavy toasted white oak.

I think what Monty meant (correct me if I'm wrong) but if you made lets say a 10 gallon batch. How much water would you boil with the grains.
Boil 3 gallons & add 7?
Maybe 4 & add 6?
I think that is what he meant. The recipe gives a water to grain ratio & not necessarily how much water used to boil to get conversion.
The. Again I could just be talkin out my ass as well

For a 5 gallon wash:
8 lbs Fawcett Optic Malt
8 lbs Simpson Peated Malt
Enough calcium to get your pH where it needs to be
White Labs WLP 045

Sounds good alpine i assume your fermenting on the grain? I dont but use the grain and leftover sugars for a sugarhead so i have something to drink while the good stuff ages.

No, I sparge like I do for beer but I don't boil the wort. I use one of those Igloo cubes with SS braid for my mash tun. My efficiency is a kinda crappy 60%, but there's not much room for improvement when you're looking at 5 gallons in the fermenter. I could probably pull off another 4 gallons and boil it down to get a 5% beer with the leftovers, but that's just too much work

I put in 7.5 gal & take off 5 gal @ 1. 060, then add another 6 gal of water & let it set overnite & throw 10 lb of sugar at it. my mashtun is about the same ( beer brewing). It works out pretty good , i would like a better conversion, but oats just don't give up much.

I suck at grain mashes.
Per gallon of mash.
2 pounds of tractor supply all grain or chicken scratch ground in the grinder.
1 pound of crushed 6 row malted barley.
A couple of spoons full of the enzymes that are only good for thinning the mash.
Ferment on the grain, rack, settle and distill.
And cross your fingers

In all of mine I used way more malt but also steel ground corn like grits and flour very good conversion better than cracked corn all day long, but harder to sparge I've stripped on the grain to get the goods without all the hard work. You're making a grain whiskey or bourbon it should taste like the grain in mine the barley is luscious yes I said luscious like coconut cream pie is luscious and that's young and white still.
Bounce between NC hooch and Jimbo and Big R, reading their work taught me how to do it best for me long steep times and a good insulated cooler, takes the hard work out. I even use my cheap kitchen beaters to blend grain and water at first. Good luck.

My first grain bill is, 6.5lb steel ground corn, 4lb rahr 6 row, and 1.5lb flaked rye. By the math that's 12lbs grain to make 6 gal mash. Any wisdom is appreciated.

I'll give it a try soon, my next ag will be rye & barley. a recipe iv'e put together for a friend. I'll let ya'll know how it goes. Iv'e never used rye so we'll se how it goes & 51% rye.

I hear a lot of folks talking minimum DP points, why go low when you can have more than enough to convert every molecule you can? The barley in this one stands out strong to me, kinda like in a Canadian whiskey even tho it's a bourbon bill. I like it white as much or more. This journey turned what I thought I liked onto its head so I'm relearning what I like to taste in my drink.

I would love to do better with the Irish Indian, ive even step mashed the oats witb a pound of malt and it doesn't seem to make a difference. i love the flavor & mouthfeel that oats adf, just don't get much sugar out of em. i would do better if i would sparge & boil like my beer. but that not gonna happen. besides i like the sugarhead it makes & it keeps me out of the good stuff till it's time.
