Hi guys, just got back from a month long stay in the Czech Republic visiting some distant cousins. The czechs are very fond of their beer and even fonder of Slivovice, a type of plum brandy that can reach some pretty high proofs. Pretty much everyone in czech has a plum tree in their backyard and every August/September they gather the fallen plums and place them in a 55 gallon drum to ferment. They dont add any additional sugar or yeast, all natural wild yeast, they just throw em in the barrel, mash em up a lil bit and let it sit in a shed till about November/December when they bring there drums down to one of the many local distilleries. I got a chance to visit one right outside of Zlin. The owner, Pavel has been running it for 18 years and it has been in his family for 120. For about $5 a gallon, he will double distill your drum of mash. It usually comes out between 55 and 65% but has to be watered down to 50% for some legal/tax reasons. This stuff is pretty clean, with little after taste and burns the whole way down but its a good burn. They dont consider it alcohol, they call it medicine. I thought you guys would enjoy these pictures of the distillery, any questions ill try my best to answer. Having half Czech ancestory(more or less) from my mother's side of the family I can attest to MY love of Beer. Of course also being half Irish(more or less) on my Father's side of the family doesn't hurt my love of alcohol either. :wink:
