I finally got my enzymes today yay. After doing the math they should convert over 300# of grain for 24$ that's pretty darn cheap compared to malt. My question now is does any one know how you are supposed to store these things? They came with no storage or usage instructions, usage although simple it's nice to look at a piece of paper until use becomes second nature. I don't want to inadvertently ruin them some how. Thanks.

Dosage is listed on enzymash. Still not sure about storage.

Just followed the links to the product data sheets from the manufacturer. Looks like the alpha enzymes are best stored at or below 10c, gluco enzymes at or below 5c. I keep mine in the back of the fridge.

Ok thanks woodshed I almost asked on your thread but didn't want to bugger it up, mommas getting my ground corn now so my Booners experience can begin. I'm also going to smoke some corn over fresh corn cobs to really add that corny umph should be pretty tasty. I can't wait.

Have not tried the cobs but will soon as we are harvesting our homegrown now.

I saw it on a food show, cutting the corn from the cob left some of the good stuff not letting them dry, supposed to produce a sweet mild corny smoke. The corn I'm going to use is Olathe sweet corn from CO.

I am loving the enzymes so far, turned my brick of corn sludge to liquid in under 5 minutes, I gave it the extra time required and it's still loosening up, added the second dose and it instantly started the turtle shell effect. In just a few minutes it was sweet to taste.
Guys try some, now we will know what a true grain tastes like distilled, ground breaking, rice is on my list next, it won't be long.

This could open up all sorts of possibilities. I just got my enzymes and can't wait to try them out.
I've go 50# of malted corn, so I will be able to do a 100% corn mash with that, and another mash with the enzymes, and be able to compare the spirits when finished.
Also, looking into possibly doing a pumpkin mash this fall. The enzymes might open up whole new avenues at the produce stand.
Let us know how the rice goes!

Excellent, post up your details! Rice has been on my list too. You can forge ground here for us. I imagine it makes a good vodka if nothing else. The Sake and Soju I drank in Asia are pretty bland, much rather have the distilled version in my dirty martini.

Pot stilled "Uncle Remus Rice Vodka" is next on my list after an apple brandy ferment has finished. I plan to do a no-boil cook of the rice and add the sebstar early in the process.

Where is a good reputable source for these enzymes in Canada? Appreciate any info. I am sure I could find many, but to find one that has a good track record is a crap shoot.

Only place I know of is enzymash.com. Look for the $24 kit that is 2 4oz bottles that contain the two enzymes you'll need for the process.
If I remember correctly, the high temp Sebstar HL is normally only available in large bulk quantities for the commercial brewing industry. The guy (Pintoshine) at enzymash buys in bulk and then repackages and sells retail.

Yeah I tried to order from pint, but there is no option for Canada when ordering. Hmmm....could open up a small sideline...city where finding malted grain is a bugger, yet plenty of home beer makers, and a Canadian source for good enzymes....i wonder...

Ok 15# ground corn 11g water no ph anything, 1.058 more than happy cooling for pitch temp now, gonna use some of my hodgson mill for whole grain, I've kept a culture going for 3-4 ferments now, it's funky in a good way that I like.
Moose he's shipping internationally send an email they got back with me same day.

i emailed sherman at enzymash about storing the enzymes and he said room temp in the bottles it came in with the lids on tight.

I am getting ready to order these. Would you be able to take the yeast bed and carry it through many generations. I'm thinking siphon the clear of the yeast bed and top of with new mash. I know with malt you run into infections pretty quick. Since all the grains are cooked they would be sterile, right?

Just my opinion at this point in my learning curve,
Medium and high temp alpha enzymes work at temps that can pasteurize the mash
This is a real advantage over using malt, that would denature at these temps.

Just a question to anyone, is there a problem with this stuff shipped regular parcel or does it have to be shipped refrigerated? I know it has to be stored cool, but would there be any worries shipping as a regular parcel?

For what's its worth mine did not come refrigerated or in any special packaging over the summer and it's worked fine, if I have lost any efficacy it hasn't effected my starch conversion but I probably over dose it a little. That being said I also work out of the house so it didn't sit outside long after it was delivered.

Great, thanks. I was just reading up on the storage temperatures as well. Being in Canada the temps are relatively cool now, so I can't see a huge problem. Apdb gave me a great link for a fantastic source here in Canada and the price is amazing (8oz or 255ml bottle of each works out to about $35 plus shipping). It's a little far off, but I think I'll try it.

Nice, check out the kit that includes both the enzyme that thins the mash and the one that converts. You'll be glad you did.

Yup. I am. It's one of each. 8oz of sebstar htl and sebamyl gl. Just waiting to hear back. They have sebamyl in stock for sure, but they have to look and see if they have sebstar. This is going to make things a whole lot better for me! Malted grains cost a fortune to get where I am (NO Local source dammit). Grains on the other hand are cheap.
