While talking to several old men, who are computer illiterate, but moonshine wise, the argument about how high of alcohol to try for in the mash came up. They all agreed that its better to try for just enough fermentables to get your mash to about 8 to 12%. Below that you waist energy and any higher, you had problems with slow fermentation's, and nasty tails. After a couple more rounds of the mason jar. One of them brought up the point "that even though you could make your mash high proof by the time you got done throwing away all the extra tails in the shine, you was waisting sugar".
