This is a great read. I find it every time I gear up to make rum.
She goes into great detail, including Oak and Fractions and all the science behind it all.
This is a technical paper - not the sunday comics, but a great read either way.

Happy reading.
I'm in the home office next to a fermenter of HookGen2 inspiring me to learn!

4.4. Conclusion
Evaluation of rum, as with any other highly alcoholic beverage faces many
problems, one of them is the impairment of the judges’ ability to perform due to such
quantities of ethanol will give the judge after tasting a large number of samples.

CHeck out the appendix for her "sample" work sheets. Great tools for us to use for evaluation of our own...
