So I have 10 gallons of fairly inexpensive cider bought yesterday just sitting in gallon containers on my table, and they are settling out. I am going to try a true applejack, which to me means no sugar added and a careful run thru my pot still. I hope to get my ferment started today and I was wondering if I should rack off each gallon into the ferment bucket leaving the sediment behind. I think it would be a lot of time and if there is no reason to rack beforehand then I will just rack when it goes into the pot. I intend to use baker's yeast and anticipate a long slow ferment. Any other tips for applejack that I should be aware of?
Research seems to indicate that I look for flavor in the heads, expect early tails, and dont hope for a quality product until after a few months on charred oak, at a minimum.
