cherry wine - pot still

hi i had 15L of Plum wine which was 12%ABV
i ran it through a potstill once so far and collected 7 pint glasses full of liquor which goes from 60% right down to 40%

what should be my next step?
Its pure white, and i would like to give it a cherry color
I have about 10L of plum wine in storage that i could mix through it or i also have frozen Strawberries that i could thaw and juice

what would give me the best result for my finished cherry brandy?

You could macerate some plums, or cherries with the liquor. Its a great way to infuse flavor into a neutral, or even a white liquor.

Go to the tried & true recipes and look at Tater's blackberry (blueberrie) brandy recipe. Worlds of opportunity.

Or, you could just send the white to me! :lol:
