sniffin the bubbler

Post by Rastus »

its been a while, but i finally poured together some water corn yeast and sugar to get a round of the UJSSM going...

within hour and a half that old bubbler on the lid started rattling around... and it is funny when i realized with all the stuff i have going on in my life i would just rather sit down and watch the bubbles percolate out and sniff the wonderful aroma that is permeating the room it is sitting in....
I cannot wait to see how this round comes out... although the first batch is a sacrificial for a new contraption i finally finished. after i sacrifice the corn batch i have a batch of my 9th generation of sweetfeed that was taken off of the grain over a year ago and sealed to wait till a better safer day. which will hold me over till the next round of corn ferments.
but anyhow ... today i cannot count the number of times i just had to wander into the room to watch it bubble and take a sniff by the lid of the bubbler...... ahhhhh better than perfume on a perty girl, almost.

well end of rambling

I love the sound of rice crispies and the smell of bread.
Yes it is my favorite part of distilling, the ferment.
There is no such thing as a stupid question....... Unless you didn't research it first.

My buckets are in a room on a floor directly above our bedroom. That percolating sound travels right through the floor and the faint aroma of my ferment in the air. I listen for that sound and take in the scent each night as it luls me to sleep!

I have three 10 gallon fermenters...one with 8th generation UJ, one with 4th generation Mongrel Rum and one with an All-Bran. All of them have stopped perking.

A sign of things to come!

When I have a big ferment on, and open the door to the shed and walk in, its like heaven. Puts a big smile on my face every single time. Gotsta be some kind of crack or something in them fumes. Defintely something primal going on that triggers an endorphin flow in the brain, or something.
In theory there's no difference between theory and practice. But in practice there is.

I love doing that. The amount of times I've walked into my garage just to stand and stare at my barrel is too many to count.

I work right by the Brown Forman, and Heaven Hill distilleries. On a cloudy day, especially when its warm and humid, the entire neighborhood smells of ferment. Its heavenly. Still not as good as my own, at home.

The GF thinks I'm silly for staring at a bunch of bubblin' buckets. She almost had me convinced of it too  . Glad to see there are others that enjoy it as much as I do.

It wasn't that long ago I started a batch of rum, woke up the next morning to to house smelling heavenly of fermenting molasses...that is until the wife say "how are we going to explain the smell when the quilt club ladies come over tonight, and there's not a cookie in the house." It was a mad scramble hauling 6 gallon buckets from the basement to the second floor bathroom that has a vent fan.

x2!! Make some cookies and fire up that old bread machine the wife never uses anymore!! That's what Brutal would have done.

So yea, that bubbler is pretty fascinating. I've been known to come home after working 12 hours and hurry through hugging the wife, kids, dogs, even one cat comes to see me at the door.. and bust ass over to the fermenter to check it out. Then try and count how many bubbles per second.. Then get up on it and give it a big sniff.. Feel it to see if it's warm.. If it's the big barrel I can unscrew the bung hole plug and shine a light down in there to see it..

I have one HAPPY infestation of yeast eating away on the s3 recipe right now. HAPPY.

Thats Nitrous Oxide not CO2. The only buzz CO2 will give you is that mild euphoria we been talking about when you walk into a fermenting shed. :)

At my favorite cigar shop they sell the co2 carts for pellet guns, right next to that whipit contraption which is obviously for inhaling. Noticed a new warning label for pellet gun cartridges saying not to inhale it.

However I have no doubt Nitrous Oxide is also a popular choice, like in that article I posted.

More than likely, they're Nitrous cartridges. They look identical to the CO2 ones. They probably had to put the warning on the CO2 ones because most kids are idiots and can't figure out the difference. The whippit contraption is commonly referred to as a "cracker". The nitrous cartridges are actually intended for those who make homemade whipped cream.

And... This is the reason huffing nitrous is commonly referred to as doing "Whip-Its"...

Ahh yes, I used to work at a coffee shop, those whipped cream bottles... Anyway, I think all of it, the process of cooking a mash, the smell and sound of the ferment, the soothing sounds of an airlock and the rhythmic drumming of a jar filling, not to mention having an amazing handmade product to enjoy, all of it gets in yer blood. Ever since making my first batch of beer I knew I would always be a home brewer to some extent. The funny thing is there's been periods where I hardly drank at all, but still continued to make it. Its a hobby that sticks with you, it may lay dormant for years, but that slow percolating sound of the airlock will find its way back to your ears eventually...

yup...
i had been out of brewing for about a year, but i kept thinking about it, as I built my newest copper sculpture, and now I am getting ready to do the vinegar and sacrificial runs on my new beast. I figured the corn wash was a easy quick way to get the sacrifice ready....
when that cornwater got to percolating, and i could smell it, the feelings flowed like poetry in my soul, and i wrote this post... and i am glad to see it resonated well amongst the group.....

time for me to get some more going cause i am going to have a hungry flute to feed

during my hiatus i have been really enjoying the Jim Beam Rye so i got me a stash of the rye bread and figure on trying Odin's recipe ..... Skoal!!!

Most people will never really know the feelings of a true honest to goodness shiner. The feeling you get when you been workin on a recipe. Then pitch the yeast and say this un is gonna start workin in 2 hrs.And sure enough rite on the money blurp goes the first bubble. It is the smell and sounds of creation. You are proud that your little minions are doing their best to make you a masterpiece that the lord himself would be proud to sip on.

well put pappy....

i have only a small bunch of friends with whom i can share the fruits of this labor....
even my grown children, mostly adults now, i dont dare mention my activities as i dont want to burden them with the
knowledge that could cause them concern... maybe some day... just not yet.
one of my very best friends is so different from me... he wants to put kool-aid or tang as a mixer...
so i buy cheap vodka to share with him haha.
because what i make is used with great reverence, and appreciation... slow straight sipping.
i love the pure flavor... that is the essence and culmination of all those preceding steps... the ingredients, the time, many hours, spent as the slow drip and trickle of the liquid grain flavors and alkyhol slowly come to be in my glass vessels. all this using a device that through the guidance and resources here, i was able to craft by the sweat of my brow using my own hands.
each of us here i am sure relishes that whole experience. it is more than just plunking a few bucks on the counter and walking away with a jug of booze....
to me it is like the hunting or farming of animals to feed your family... only "spiritual" cant help the pun. like they say no one should eat a hamburger till they have been to the slaughter house... I really love the holistic aspect of our hobby and passion here. it feeds the engineer, the artist, the cook, the mad scientist in us all and on top of all that, it soothes this old mans aching bones ... haha.

of course my sweetfeed with higher levels of molasses as each generation passed, did mix quite nicely with plain coconut water....

and Pappy i like also how you refer to the creating and the minions... thinking on that i realize those minions are here for anyone! god himself let them be here, and it is up to each soul who can recognize the gift and make use of it in their own way... is it bread or is it beer? or is it whiskey? Rum? etc. using the primary colors and by blending them we have great masterpieces, in a chapel or a museum... what we make is to be enjoyed in a different way a circle of pleasure that in a way begins, at the sniff of a bubbler

ok stepping down from my soap box. Its good to express it because i cannot talk to hardly anyone in my normal life...
