I'll start with a little history. Then a question.
I'm a new member to the forum but not a total noob to shinin'. It's been in my family for several generations. My Family heritage and roots have been traced back to one of the first families of this region of KY, back to the colonial times lol. And beyond that, all the way back to Scotland.
Turns out, when the GOV came to this area to build The Gold Vault, (that oughta give ya a pretty good idea, lol) Uncle Sam actually gave every resident on the land they wanted a check for their land.
Well, my Family was here shinin'. Apparently my Family members did not feel the U.S. Government had compensated them nearly enough. So my ancestors took Uncle Sam to court for more. And they won the lawsuit. The U.S. Government had to cut another check. Lol.
So there is my little piece of Shiner history. With that said, I recently got into the art/ hobby of distilling just about two years ago. I've only made a couple runs, and they were pretty much just me helping my brother.
Now I've read up on tons of articles and want to do it independently now.
My question is......what kind of mash doesn't require any cooking? If I remember correctly, the last time I helped my brother make a mash...
We just mixed a bunch of yellow cornmeal and twice as much sugar, in a 55 gallon blue food grade drum, and added like 3/4 a cup of yeast. Just red star baker's yeast i believe. And let it set for almost weeks. More like 10 days really. And we never used fancy airlocks. We just cracked the lid on the drum like every other day, stirred it, and closed it back up.
So can anyone give me a straight up, bare bones, NO BOILING, simple, layman's terms recipe for a cornmeal, sugar, water, and yeast mash?
