Wanted to share my recipe for gin, because its amazing... and after only 2 batches I feel as though I won't do any more tweaking because - yeah it's friggin tasty and I wish you could all try it.. While I realize what you start out with will have an effect on the final product, I've had good luck with ec-1118, bakers yeast and turbo yeast... My setup, which you can see here: http://homedistiller.org/forum/viewtopi ... 50&t=55572 seems to be a quite efficient, as I'm getting 90% alcohol in 2 runs.. And similar flavors in final product regardless of the much-hated turbo yeast used.. (I, similar to many of you im sure) work too much and have limited free time to dedicate to this hobby without the smarter/prettier half getting upset about the time I'm spending with my copper and stainless steel friends.. So I like the fact I can start a batch on my day off and by my next day off its ready to run (to you turbo yeast haters, if the product tastes bad, should you be blaming the yeast? Or maybe adjust your cuts? Because I haven't had a bad taste yet, not one that couldn't be fixed by redistilling.. Just saying ) but anyway, this last batch is actually a combination of a 5.5gal turbo yeast sugar wash and a 4gal bakers yeast sugar wash ran together to produce about 2gal collected until it hit 10-20%, somewhere in there... Didn't check the temp at that point just could tell it was done... Then ran a 2nd time with the botanicals in the column (see pics in link).. actually not pictured is a stainless tea 'basket'.. strainer/filter... Whatever you wanna call it, which sits nicely in the 4"-2" reducer part of the column so that every bit of vapor is forced through the goodies... IMO it's the best way to make gin.. Infusing just seems like cheating... it's not at all I realize, but... I made my still with gin in mind, because it's how I wanted to make it... SO, yeah.. after searching the Google interweb and reading a few books (pdf's to be specific) (also, download or find 'the drunken botanist' if you haven't already, wealth of info in that book, whether you make booze or not.) ... I came up with the following concoction:

2Tblsp (.5 oz) Juniper
1.5tsp coriander (.1oz)
.75 tsp lavender
1 tsp Angelica root (.1oz)
1/2 tsp Orris Root
2 tsp licorice root(.1oz)
1/2tsp bitter orange peel
Zest of 2 limes (4gram), 1 lemon (4gram), and 1 Grapefruit (5gram)..

Just made some yesterday so today after work I THOROUGHLY enjoyed a pint jar sized G&T... if you're out there and looking to find a recipe, I hope this helps, and if you make some using it reply and tell me whatchya think!

So just confirming - This botanical recipe is for about a 2 gal volume after a stripping run? You then dilute down to about 40%ish and the gin flavors come through very nice in the finished product? Appreciate any clarification, I'd love to give it a go. Thanks!

Yep! I did a stripping run and ended up with 2 gallons and an almost full quart on top of that.. though I didn't dilute it, not sure what it would've averaged out to, as the first run was split up into quart jars, ranging from 70% down to 10-20% I could've measured after combining back into the boiler but .. forgot/didn't think of it.. but.. i'd say 40-50 is probably about right yeah.. so yes, to answer (as best I can) your question :) The flavor ends up amazing.. my previous batch had too much angelica and/or licorice root in it.. had some odd flavor, but still drinkable, so this time i cut it in half and doubled the juniper from what i had done before... and it's great! lemme know how it goes!
