You just don't see those homemade racks for storing the barrels during the aging process here in the US.

What surprized me, Bushman, was the design of the still. Not a gas out tube on top of the onion, but in the onion, slightly sloped downwards and feeding the column to the right. That must create some overpressure and hence unwanted passive reflux in the actual onion, I imagine.

Yeah, it's off to the good old USA in just 5 weeks. And from there to Canada's West Coast. Maybe a short trip down to Seattle from there.
I actually hope to spend my summer holidays in Europe. No time zone shit for a change.
And by the end of October I'll probably spent another week in North Florida and South Georgia to give a training class.
Difficult, but someone has to do it!

Thanks MDH! I won't have a lot of time, since it will be work and more work. But I will contact you and get your advice. Heck, when in Montreal, we were so busy I didn't get to see anything. Not even the old city! Let's do that differently when visiting the western parts of your beautiful country! And the good news is ... I will be visiting the Seattle Proof Meeting on July 11th!
