Failed Cinnamon UJSSM

Well Last Spring I worked up a couple of quarts of UJSSM with some cinnamon sticks and then added the sugar. It went over really well and a couple of my kids really liked it. So I put up 4 quarts with about 4-6 sticks in each and told my son to check them in 30 days... (I dont drink the cinnamon stuff but he does). Anyway he didnt check on it at 30 days or as a matter of fact at 120 days. Well he says it is ruined and way too "hot" cinnamonny to drink....
Since it is only a gallon or so can I rerun it with some feints cut down to 40% and hold it back to put on cinnamon as needed. I run a pot still so a lot of the cinnamon flavor is sure to run over. I am concerned about only running a couple of gallons at a time through the still...
So one gallon =/- of overdone cinnamon....
WWHDDD What would Home Distiller Do???

Have you tried diluting with fresh UJ? I did some apple pie like that one time. Turned out fine. Might save ya some time/ energy.
But what the heck do I know.....I am still learning.

I agree on diluting first. What can happen? You wind up with a bunch of decent cinnamon UJ.
Gotta be careful with cinnamon sticks just as you do vanilla beans. I did the same thing just not as drastic. A bit of diluting fixed it.

Ric try using the cinnamon candy disks.solid red and look like peppermints.bout ten or twelve to a quart.

Thanks for the input Fellas.

I been thinkin about this a bit.... I have been shut down during the heat of the summer and have just finished up two(2) five gal ferments of now first gen UJJSM. the spirit run from this would probably work fine for dilution.... Cuz I remember the first couple of spirit runs before the UJSSM got some "sour" to it weren't that great..
Therefore we will throw the first couple of runs to cinnamon and be ready for winter !!

SL1, I am going to try the dilution method first. Add some of this first generation UJSSM to the overspiced cinnamon likker and see where we are..

Hey ranger_ric,

Have you ever tried flavoring UJ with cardamom? I Crack about 1 1/2 tsp of cardamom pods and add to 1 liter and age for 30 days. It's pretty tasty.

I just googled cardamom and from their description could not figure out if I had ever tasted it....
Can you give me a reference of something that uses cardamom??

Sounds good. You know another thought is that 40% dilution is the minimum.... not the standard. Your initial worry was running too little in the still right? What if you diluted waaaay below that? Say 10 or 15%? I have no clue what would happen just flapping in the breeze here.

Thanks for the reminder about 40% being max. not min. I will try dilution with this first generation batch and see where I am. I figure that no matter what I do with my pot still that the cinnamon is going to carry over... I can tone it down with a run but it will always be there..
Kinda lookin forward to how this experiment turns out..
My Daughter in Law still doesnt believe me that my likker will not give you a headache in the mornin...

Might turn out pretty cool. A clear cinnamon likker. Kinda like the clear apple pie I hear people talking about. Makes me tempted to over cinnamon some UJ and re run it with apple juice in the thump.

OK I'll stop cluttering your thread with my ramblings now. Looking forward to the results. When you plan to run this?

In India it is often used in sweets like we use vanilla. Here in the west it is used in flavoring meat. I don't have the words to describe it, maybe a combo of strong vanilla and anise. When a neutral alcohol is flavored with cardamom it goes down like candy. If you take one wiff of the stuff you will immediately think, hey this would make a good flavoring for a liqueur. Small amounts are sometimes used in gin. I use it to flavor neutrals and in my "CardiRum".

I got two stripping runs of this new first gen UJ and then a spirit run and then dilute the gallon of cinnamon stuff.... Check and see if we can make that work and then if NOT then we will have 1.5 to 2 gallons of 60% or so of cinnamon that we can dilute down and rerun if need be.. So a couple of weeks on my calendar. cross your fingers..

I have combined cinnamon and cardamom, they work well together. I often combine them in cooking too. Bread pudding with raisins cinnamon and cardamom. Damn, its almost time for breakfast.

Rick you don't have a thumper do you? If.you do cut it down to 25-30% and charge the thumpr.with apple juice. Should give you clear apple.pie.

Don't try to dilute the cinnamon. Especially without doing a small sample first.

Keep it to use as an essence. Add just enough to flavor the new.

I forgot some prairie piss. Sticks on neutral. Over a year later I ended up with a cinnamon essence that is killer. A few drops are easily detectable in a quart. I've been using it in my cooking, not unlike a few other similar mistakes.

Thanks for the encouragement, However I am sittin on a gallon of essence at 63% Ethanol.. looks like 12 lifetimes of recipes..
Gonna try a little dilution with more Ethanol and see where I am. Iffin that doesnt work out I am going to save this first Generation UJSSM spirit run to add to it and see where I am there... Stillin is always an adventure aint it !!
