How old is you oldest batch? I made a batch of Bourbon and gave a big 2.5L bottle to my first born nephew it had a few little wood chips in the bottle. He is now 15 only three more years to go until we drink it at his 18th Birthday party. I have a 25L demijong that has been sitting now for 2 1/2 years made when my daughter was born for her 18th party it has been lightly flavored and a good helping of oak chips. The rest of mine only lasts a year or two depending on my drinking rate and how much I make in a batch. I am going to try and make enough to put away 90 % so it has less chance of going off and then I will always have something in case I run out of a batch.

I've got a few bottles of 15 year old too. Apple brandy. That was the last I distilled until this year.

Still no sign of rancio. Well, if rancio really is what I think I tasted in the bottle of 50 year old Armangnac I got for my 50th.

Got two 7.5 gallon kegs with six gallon each plus twenty four finger sized blocks in each. The oldest in the keg is from April the freshest is from two weeks ago.the wood was added two weeks ago. It is half pecan half oak half of each toasted and half of each charred. The liquor is two different types of chicken feed ujssm. One is corn and wheat,the other corn wheat milo barley and oats.

Still have a jar of fores from my first "successful" run 5 years ago. Every now and then I smell them to see how far I came.
Oldest drinkable is a half pint of Kahlua that got buried in the cabinet that is 3 1/2 years old.

I got some kept from my first batch.. .that would make it just shy of a year, pure swill but keeping it there for the same reason Jed is.
I have my first AG sitting on oak for about two months now, it will sit there for an other 18 years as it was made on the day of my youngest son, will share it with him on his 18th birthday.

my brother has a pint from my second ever distillation in 2013. it was a sweet feed, and 2 row barley.

I got a quart from questionable watermelon experiment few years ago. This topic reminded me of it so I went out and checked. Still tastes like sh!t...guess I might as well dump it in with the prune liquor and stick a medicine label on it.

5 gallon white oak barrel full of UJSSM 10 months old . Tastes pretty harsh right now. God, I can't wait as long a some of you. I want it to be ready now. It's easy to have patience when you are young, but hell, I may not be around waiting for this to get really good. But, at least I can make something drinkable right now and I guess that's what this hobby is all about. I've only been at this for a year and this is an amazing hobby.

I think patience actually improves when you get older It certainly has with me at least to some degree. When I was I young kid full of energy I wanted things done now. I still rush in quite often but I am able to put things off a bit more and let them wait a bit. I have so many unfinished jobs now that there is always something else to finish off or start.

got a bottle of one of my first few keepers runs. it was a rum . havent come across that bottle in a while but , thats almost 3 years old. also have a bottle of my first all grain. i believe it a was 50% malted wheat and 50% 6 row. thats about a year and half.


about a year ago i started to get a hang of AG . so i have a bunch of bottles between the 4-12 month mark.

Put away two bottles of Partial Mash Whiskey/Honey shine (one oaked and one white) and a bottle of spiced rum that were left over from my wedding in October. Gonna leave em up and only taste them on our anniversary each year until they're gone. Should last about 5 years or so I'd think .... OK I might drink it all this year but thats OK!

My oldest run was put into a 15 gal. cask I alligator charred during the build in 1987, it is still there and being turned every three months. I tasted it last week and it's at about time to bottle up.
The cask has lost around 2.5 gal. to the angels since it was racked and has only had 4 ounces pulled for checking.

If I wanted to keep it aging longer I would move it to a new cask next year but I think it is about as smooth as it can get now.

Scout, are you in need of help to empty them barrels , sound like an awfull job for one man

Old doesn't have to mean good right? Cuz I have a gallon jug of 25+ year old rum. It was really bad 25 years ago and time hasn't helped it much. One of my first attempts at making rum. I also keep this cloudy concoction around to see how far I come.

I have 2 or 3 half gallons of ujssm that date back to 2006, 2007. I have found that if you take it off the oak, and bottle it to let set for another 6 months or so it really mellows out. I know this sounds like a long time BUT from your mid forties and into your mid fifties the years just RUSH bye. Take these words from and old sinner that has no cause to lie.

Have a 15 litre oak barrel with apple brandy that's nearly a year old. It's 75% ABV and the intention was to take 5 litres out every Christmas and top it back up. That way it would age but never run dry! Trouble is - I keep taking the odd bottle out, but the idea was sound

I just pulled a jar of rum off the shelf labeled 2014. I thought it was a lost cause when I stuck it back there. I sampled it today and is probably the best rum I've had.

I have about 6 gallons of the best wheated Bourbon ever sitting on 8 different woods, I made it almost 3 years ago. Sadly it is sitting in the County evidence locker in downtown SD. I can only imagine how good it tastes right now. It kept getting better and better.

After a point, evidence/contraband is "destroyed", especially after the case is dismissed. Yours is probably gone, but not forgotten.

I would prefer to believe my babies still exist and I hold on to hope that I might get them back......even if I know that is an impossibility. It makes me feel better.
