Hi. I'm new here so I've been going through the posts. I saw one, a few years old, about using Alpha-Amylase enzymes to convert your starch faster. Is this something I should look into?

JJMck,
There are a lot of variables on this subject. The answer is yes, and no. It depends on the mash/wash/recipe you are making.
Here is a link that may help. If you haven't already, I suggest learning how to use the HD google search to find all there is on a given subject. Here is the link on alpha amalase: site:http://homedistiller.org/forum alpha amylase

Also search for booner's casual all corn. It's got the full rundown on the process.

Try searching "SEBstar HTL" and/or "BA100" that's the most common alpha amylase enzymes used here.
