I recently picked up 2 of these 1/2 gallon jars... looked great for aging.

The only issue is the lid is plastic. Is there something I can put in there to separate the alcohol and plastic from contact and use it for aging?

Nice find.
Looks like one of those used for candy.
You could try to get some corkstoppers for them, that would solve the plastic issue.
Or if you have access to a lathe you could make some slightly conical out of wood..a few wraps with PTFE tape , would make them seal completely airtight.
Alternatively cut a piece of wood, attach it to your drillmachine and sand the edge to get it rounded and smooth.
Edit: Posted same time as Yak.

Thanks gents.
What if I were to line the lid with a cutout of this teflon press sheet. Not sure which teflon this is exactly..

Don't over think it. It's just an opening. Cover it with some oak and be done with it already. Just lay a square big enough to cover it and let it sit. Go do something else for a year or two!

x2

and if you don't want to feed the angels too much you can rub some bees wax on the outside of your wood lid.
