Just like the title says! So a good friend of mine who lives in a beautiful mountainous region of BC was visiting, and told me he had 2 giant freezers full of Pears, grapes, plums, and apricots.. Plus 4 5gallon pails of some crystalized cloudy honey he traded for firewood from a local bee keeper.
I have tried a honey/fruit Brandy before someone had brought back from visiting family in Croatia. This is giving me something to look forward to when in the spring. Has anyone made anything like this? Is there a ratio of Honey to fruit? Yeast? White wine or champagne? Also the gravity.. Should I go for something high gravity? Like try for a 11% ABV wash.
