Bottle to beverage...

Evening all...
I have a quick question. I have a few different batches of sweet feed that I put on wood. It went on wood about 3 months ago at about 60% ABV. It was looking and tasting quite nice so I pulled it off and bottled it.

This is the longest I have aged anything on wood so far...question is: any reason to let it sit in the bottle for a bit (aside from more time...) before sippin?

3 months is still young. More time would improve it obviously. But, if you don't have enything (mature) to sip, then by all means...pop your cork!

Now you are at the point where you can learn what "age" does to a whiskey. Enjoy.

I believe it helps to let it age for a while after it comes off the wood. I age mine for a few years on oak and like to let it set for a couple of months after it is strained off and let it breath whenever I think about it. I Try to save some white likker from each run to hold me over to the next....that keeps me out of the aging stock. Just my 2 cents .... If you like it then it's all good.

It will age better on the wood, so I only bottle enough for my needs, usually one bottle at a time.

A rest after dilution is beneficial, so try to plan ahead a few weeks.

In the same vein... has anyone ever tried adding "new" wood after a while or maybe changing the wood all together? Just wondering if it might speedup/hinder the process or change some other unpredictable...

Go ahead and re-wood. (120 proof, right?)

Have you tempered it already? If so, the whiskey will pick up different flavors from the wood. I don't like to re-wood after tempering from 125-130 proof (my preferred aging strength). Even after I pull it off wood, I still keep it at 125 proof. I temper to drinking strength when I bottle...for drinking.

Sadly I have already cut it down to about 90 proof. I will let it rest in the bottle for a little while and see how she goes. What I didn't want to do was leave it on wood chips for too long and since it was tasting darn good I thought I would pull it off and see.
