Danstar Nottingham Ale Dry Yeast
any one ever used this for whiskey?
I use a pot still.Sometimes with a thumper

Used it for beer before. It has a very good flocculation and produces a drier beer. Should work fine on whiskey. I have used SafAle-05 on whiskey and it worked great. I'd like to try the 04 but lately just been using Baker's yeast cake as it works and is cheaper than dry yeats.

Best yeast profile I ever did was 1 packet of Nottingham, one of safale 05. Great winter combo for the cooler ferments. I'm probably going to do it when the tempature breaks. Always did it with UJSSM before, then been on bakers for 3 years. Thanks for reminding me!

Nottingham is a very strong fermenter with great attenuation. Very neutral at lower temperatures. Throws lots of esters at higher ones.

I use it all the time Tater. I live in colder climate that's consistently 55f all year long and it's pretty nutral and finishes dry about like bakers yeast but ferments better then bakers yeast in a cool ferment. I haven't really tried it in a warm ferment but I would suspect it would react about like most ale yeasts.

I use it in the winter. Really like it! Pretty fast to when you take the temp into account.
