Today we started a new serie of short articles on challenges (known and unknown) craft distillers face. Distilling-wise not business- or corona-wise. The first one is about air pressure and its influence on cuts. I think the serie will give a nice view into our way of thinking ... and I hope the readers find it interesting as well as self promoting!

Today we are shooting three more video's to bring the iStill University Training for craft distillers online. The introduction will deal with goals and approach and the curriculum. The second video will be presenting the roadmap to craft distilling, where we present distilling as an interlinked process of a finite number of steps. The last video we'll be doing today, will dive into Odin's Theory of Distillation AKA the Holy Trinity of Distillation. The video's will be uploaded end of next week!

We are working on some great new tech over here. Where we aim not just at early adopters and innovators and early majority, but also target late majority. Think more old-tech like potstill and perf plate, and more, but managed via our amazing control systems and designed upward from the theoretical distilling framework I developed. Not sure about introduction yet, because the perf plates alone (redesigned and managed via our automation and robotization) show a 2 to 3 times improvement over existing tech. So, yeah, we can introduce it. But we are already so freakingly busy as it is, right now ...
The other "thing" that is a thing here, is our (my) stubborn-ness. Are we telling it like it is ... or will we accept there's others out there that simply want a potstill or bubble caps or a perf plate ... and instead of us explaining there are more modern options out there, maybe we should just provide the best solution within each category. Like this: "You want a perf plate, you want a continuous still? Okay, we'll make sure you get the best variety of the still category you want to go with". Instead of saying: "We know what's best and you better listen, 'cause that's "all" we will deliver!"
There is a lot to say for both options, but if we want to conquer later majorities as well, we (or better said: I) need decent from that proverbial throne we are currently sitting on, on top of that mountain, above the clouds.
Does that make sense?

Liquid management instead of CM to get rid of reflux variability induced by 1. water temp differences, 2. water temp/room temp-differential, and 3. water pressure differences. Instead, reflux ratio is managed via our robot on a second-to-second basis. Only variable left that potentially influences reproducability in spirits production now is (changes in) air pressure. So the unit has air pressure control as well.
Gasses rise up through column and plates, go through a collection system (think Boka only way optimized), then hit the column cooler, liquify, fall back, get scooped up by the collection system and presented to the robot (that decides - based on program settings, distilling goals, power, air pressure, etc. - on reflux ratio), from there part gets returned to the column to fill the plates / aid redistillation, and part goes to the secondary product cooler. From there product goes to the cuts selector that divides fractions in heads, hearts, and tails.
No Nixon/Stone. You might be mistaken by the housing of the robot, that makes it look that way a bit.
