What water for my mash?
Should no be using distilled water for my mash? Can I use the water from my pur filter or is regular tap water ok?

From what I have read here distilled water lacks minerals that are beneficial to yeast. I was buying spring water and at one point was transporting water down from my summer home which had a drilled well on it. Now I use tap water but let it sit a day before I start my ferment.

You want to use water that tastes good.
I've used RO/Distilled water, but you need to add things back to the water to make up for what's been stripped out or you are likely to run into nutrient and pH problems. Plenty of info out there on how to do it, if that's your choice.

I find the wet kind works best
I usually use rain water but brewers tell me city water where I live is perfect.

No, officer, I wasn't distilling alcohol! It was probably that guy!

I have found that I get the best results when I use dihydrogen monoxide (aka, H2O). Somehow, the color and texture work well with the nutrients and sugars to activate the yeast best. In the end, it is my ferment of choice.

I've got well water with a PH of 5.5. Works for me

Distilling at 110f and 75 torr.
