Hello all!
A "friend" let me sample his banana, black cherry and apple pie shine. It was better than anything I'd ever made, but what impressed me the most was the fact that his stuff was clear as spring water, yet sweet and flavorful.
Can anyone help me make similar stuff? He said he didn't use extract and only told me to google "sugar shine" when I pressed him for the recipe.
I am guessing that he added the fruit to his mash, fermented and then distilled. Leaving the final product clear, yet holding some of the flavor of the fruit. Then he back-sweetened with sugar.
Has anyone ever done this and/or can direct me to a recipe? I especially liked his banana shine.

I bet he put the fruit into a thumper. It would carry a lot of the flavor without the color.

Ahhh! That makes sense. Is there anyway you think it could be done with a reflux still? I thought of using bananas in the mash, but I'm thinking that most (if not all) of the flavor would be lost during the distillation process.

Banana mashes have been discussed countless times. Not the best way to get big banana flavors. And their sugar content is relatively low, if you're looking to use that for alcohol production.

With a (VM or CM) reflux still, you could put the banana peels in the vapor path to extract some of that flavor. It would be similar to using a thumper, right?

If you've only got a LM (Boka) head, it sounds like a great time to "get building". A potstill is always good to have. And a "vapor infusion basket" is also a great tool to have in your tool chest.

i think the thread is "clear apple pie" did jed start that thread? either case gonna have to do some reading about " shootin the thumper" at least. so im told .

I remember reading this chart http://homedistiller.org/forum/viewtopi ... t#p7407290 and it would seem that banana has the highest sugar content of them all at 22.6.

I get big banana flavor out of overripe, oven-roasted bananas, which are then simmered with peels. Even with sugar added and a 1.5 pot run, banana is quite pronounced. Big banana flavor is quite doable.
