Show Us Your Infection

Here's my latest. Was a beautiful lacto, I raised the temp to get the yeast to fire back up, it did not. Killed the heat, lacto came back.

This is my Double Lacto Candy Bear.

Too bad you didn't post this a couple days ago. I just ran off a rum that had about an inch of white fluffy funk on top that I have no idea what the hell it was. Unfortunately I didn't take a picture :(

I'm pretty sure this rum will cure just about anything that ails you. I used infected dunder in the ferment which is where the funk came from and the fermenter had a loose fitting top so the infection was expected. The rum tastes pretty good too :D

I had the same on my most recent rum... syphoned off most of the liquid, and was left with a whole whack of slimy stuff. Ran the rum and it was the worst thing to come out of my still. New batch started right away with same Dundee..added more sugar and yeast with tomato paste. Wait and see now

i must live in lacto land. left a stillage full of stillage...a few days later cracked the top, i was pretty surprised to see a moonscape in there... it was boiling for a few hours. man that shit has to be temp and low ph resistant.

could not have been airborne, the still was closed since the cook.

Lacto has become the norm for me if I don't sanitize or leave a lid loose. I even get it in my cooling reservoir.

Not sure if this one counts, it grew in a tub of UJSM backset that I forgot to throw out.

LOL , I can relate to the "thing " Salty found in his UJ backset ...seems these scobies are quite happy to grow in this sort of environment .

Here's what I found in my Rum dunder...incidentally , this is what convinced me to piss off scanky Dunder and only do reasonably fresh stuff :oops:

So just to clarify, is this lacto type infections...good for product. Mine looked like the thick brow stuff being held by Saltbush. Clear and run it? Pls and thanks

GG if you are referring to my infection then yes! That lacto, while stealing a little bit of the alcohol in the wash, is providing my bourbon with some beautiful flavors. I have had it in every single bourbon I have made... I think it came in either on my rye or on the TSC cracked corn but I'm not complaining!

I siphon the beer off through one of my special socks into the boiler and run her! Not one complaint.


As far as what SBB has going on there....WHEW! That s**t looks like pure EVIL :twisted: .
