Need HELP with Using the Refractometer and pH

I have read my ass off and I hardly read unless I really want to & have read for hours on this site so far, I love it!
I haven't found in depth information on how to use the refractometer, it's values, numbers and what they
all mean and how to use them to make the most out of your mash.
I found a little info on pH levels and how they affect your mash, but I wold like some help and detailed info on pH.
I will be building my first still this week and want to start a mash later this week, will post pictures.
Is it true you can't use town tap water? I have bought the 5 gallon carboy bottle of soft water at my local grocer, I would like to use the well water from a friend's place that goes thru a softener and blue UV light, his well is spring fed.
If anyone can help me with detailed info on refracting and pH I would greatly appreciate it!!
