rum infusions ideas

So i have done my first double distilled rum and its smooth as hell problem is i only have a 2 liter barrel at the moment.... iv cut it all down to 60% and thinking of trying some infusions in small 250ml containers

so far i have cinnamon, vanilla, coconut and a clove and five spice combination (started off tasting horrible is actually balancing out really well)

so i was wondering has anyone got any suggestions on what else i can try? or am i committing a cardinal distillers sin?

I'll make an apple pie with rum, mmmm m :thumbup:
I would also keep some white at 60% for a month or three and see how it mellows.
My last run is about a month now and the white is very good and getting better. The aged has taken the oak notes now and now it's sitting for 6-? Months and see how it develops.
Take a quart and cut to 50%,
1 whole green apple
1/3 cup dark brown sugar
8-10 shakes of apple pie spice
1 short cinnamon stick
It's ready soon as you can get the sugar to disolve, better if left for a week.

i make apple pie as well with rum. there is no way in hell my AG whiskey is going to turn into AP.

my recipe is quite easy. i cut enough apple to fill a quart jar loosely. i soak a few cinnamon sticks in rum . this is used sparingly in my recipe
then 60% filled up about a 1/3
few tablespoons of brown sugar
a bit of cinnamon rum to taste
topped off with apple cider

pretty simple stuff

Get yourself a vanilla bean, and add 1/4 to a litre of your spirits, let it sit a few days, strain through a coffee filter and then enjoy!

I've put a handful of hazelnuts into some rum I made a few years ago... I liked how it turned out...watch out for the oils from the nuts tho'

i will give them all 3 suggestions a go...
quick question do you drink the apple pie recopies at 60% of do cut it to 40% for drinking

I made some mango infused rum a while back. I will definitely be making that again.

with my recipe it ends up being like 20-25% abv. easy drinking. the apple slices seem to displace the water in them with alcohol. so the slices of apple are pretty strong

I add a little simple syrup to mine...not a lot....with the nuts it makes a bit of a smoother sip!

Did the oils make it go cloudy when you added water or ice?

Once you start infusing - "the world's your lobster...."

With 250 ml samples be very careful not to overload the flavour. Try 1/2 a dried apricot ! 3 or 4 bits of dried banana. If you can get Blackthorn berries (Sloes we call 'em) 30 - 40 perhaps and a little sugar. Meadowsweet - 1 leaf, Hawthorn 40 or so berries. In al cases sugar to taste, but remember you acan always add more sugar :)

But sample regularly - every day or two and get the flavour OUT as soon as you reach "Nice".

Check out a thread under ~Rum Conundrum~ my oils formed little blobs that floated around. Disappeared when I shook it but then reformed. Kind of like oil and water. Look up the Rum Conundrum thread and you`ll find out more.
