Hello all I am new here.

I am an older guy from the great state of Texas. I am one of those DIY guys tht tries to learn any survial skill that I can from hunting and fishing to making my own drink! I have been craft distilling for almost a decade now. I specialize in mostly things that I can get here which is mostly fruits. For grains I have only ran corn as its easy to get and I dont seem to find where to get other grains other than a beer making store in small quantities and pretty pricey. My favorite brandy is apple but I recently started in on my own verions of congac I call congacish hehehe

I don't have all the science and X and O's type of knowledge that I see here. I don't even have a thermometer on my still or hydrometer for reading mash and pretty much taught myself from reading books and some online reading recently. I hope to learn more about how to improve what I have been doing although sometimes I wonder if liquor can ever really taste good. I met Tim Smith awhile back and tried his moonshine and honestly I was disappointed as it tasted pretty spot on to my corn liquor. I think he had a little bit more smoothness to his in all honesty.

I currently have one awesome 15 gallon copper pot still and 2 gallon copper thump keg I had made by a friend that was a sheet metal guy and knew what he was doing and I built my worm myself. I would like to go up to a 30 gallon still someday. Not sure why but I seem to do everything in 15 or 30 gallon batches as far as mashing goes.

Anyway I just wanted to say Howdy and I will try not to bother anyone. If i can help anyone out please let me know.
