Due to poor planning, I cannot run my first mash until next weekend. The mash has finished the conversion and finished settling yesterday. My question is will the quality of the mash be affected if I let it sit for another 5-6 days before I can run it.

The mash is a flaked maize and 6 row malted barley (about 5.5 gallons).

I can rack it off into another bucket if that would be better, but I also wonder if leaving in the Lees would be ok and maybe even impart better flavor?

I can also store it in a cool part of the basement at around 63% F.

Any thoughts or suggestion would be appreciated.
