My own Stiggins Rum

I really liked what I saw there so I decided to give it a go.

First I wondered what kind of container I'd use to add pineapple to rum, I don't like the idea of trying to clean chunks out of a carboy.
So I found and ordered one of these:

I also have a 5 gallon corny keg with a big opening at the top.

I decided to use the glass carboy for the fruit and the corny keg for infusing the rinds.

I just happened to have several gallons of my own dark aged rum and several gallons of new rum.
So I'm infusing a large amount of fresh ripe pineapple in the dark rum and a bunch of pineapple rinds in the new rum.

In a week I will run the new stuff through the pot still again and then let it age while the fruit infusion goes on for three months.
I think it's going to be a very happy Christmas around here!
