Hello from the Great White North

Hi all

Names jonobrew. From Canada. (Somewhere west of Saskatchewan) Been an all grain brewer for 20 years. Have ghetto gear, and my buddy and I recently turned my SS brewteck kettle into a pot still. Was easy to do after all of the reading that I have done here. Thanks for everything already. My interest lies in whiskey and gin. Mashing anything, including corn with enzymes is no problem for me, but I sometimes do struggle with managing ferments to completion. I am looking forward to learning more and getting involved here.

Welcome! Twenty year of all grain brewing experience is a wonderful foundation for a good whisky. You have a big chunk of the critical skills mastered. Enjoy!

Welcome from another part of Canada.

As you've seen there is a ton of information available, so keep reading and ask if you can't find what you are looking for.

Your grain experience will serve you well, but recognize the differences between distiller's beer and drinking beer. You may have to change your thinking a bit (e.g. sanitation). Sometimes infections are a good thing.

There is a ton of great insight here re Gin. In particular have a look at "Odin's Easy Gin" in tried and true. It's a perfect start and an excellent drink. To achieve this you're probably going to want to build a column for making neutral; plenty of reading available on that topic also. Probably save your grains for the whisky and make up a sugar wash for that though.
