Maybe this will help someone as it helped me:

A while back I accidentally melted a portion of my Inkbird temperature sensor cable, rendering it useless.
If you have an ITC-308 and find yourself in the same predicament, don't give up. They make a plug and jack
replacement for about $10. It requires soldering the jack portion of the cable into the main unit, but then you're set.

You can then alternately use the 12" temp probe too, as it has the same plug.
Here's the Amazon link. They don't show the jack portion, but it does come with it.

This is good info, Fizzix. One of mine seems loose where the thermocouple cover crimps onto the wire. I’ve been waiting for it to break.

They really should make this a standard feature. I can’t tell you how many times I’ve inserted the probe and then realized I haven’t put the seal ring on the fermenter yet! With my setup, it would also make checking the ferment easier if I could unplug the probe cord before trying to remove the lid. I’m going to add this feature to mine.

Thanks again for the info.

You bet. I was relieved when I saw I didn't have to buy a whole unit.

Did two of these conversions the other day in less than 1 hr total. You have to be a little careful with the heat input to the circuit board connections, but, it worked like a charm. Checked the calibration and they were good to go. Easy repair and now they are more flexible to use.
Thanks, Fizzix
