Apple juice in open container ?

I got loads of apple juice coming my way next week and I don't have enough air tight containers to ferment it all. Is it possible to do it in open container ? Normally all recipes I've found use carboy or something with airlock. And how long it usually takes for apple wine to turn into vinegar ?

If it's not possible, I will heat it up and hope nothing bad happens until I free up my airlock containers for the next run, unless you have some better ideas.
