Hey guys! So, i had this idea: a brandy with 3 fruits that will go well together!
Actually im going to fermemt and distill them separately and then will blend!
Im starting with the lychee: 10kg of fruit gave me 5L of fruit juice/puree at 18 Brix, so its a 1 for 2 ratio L/Kg.
No sugar or water added, i want to understand those essential oils first, then, maybe, i will slowly putting some sugars!
Fermenting with bread yeast at room temperature!
Since i have a copper pot still i will put it into jars to blend later.
I have some pictures, but i can't add them with my phone (i think the problem is me hahahahaha), if someone could tell me how, i will post some!
