Red Star Cotes des Rhone blanc

I bought this recently and tried it out on a Bourbon type whiskey. I used a recipe similar to NChooch. At first I used RS DADY. It worked fine, but smelled yeasty and once was a bit funky actually. That distilled OK though. I like the idea of brandy and so I got this new yeast to use for juice. Currently I have a lot of corn so I pitched it in the Bourbon mix and OMG! This is the best, sweetest, most pleasant smelling fermentation ever. It fermented in my house at 71*, and bubbled furiously, quick and done. So I racked that, stripped it and tossed some sugar in the backset into the trub for fun. It fermented that quickly also. It has a distinctive winy smell and taste, much like a white burgundy. The low wines from the first part, with a lot of tails in it, smells really pleasant. We will see what the final product is like in a day or two after I strip this second fermentation. So far, I really like this yeast.
