Bubble Cap Question?

I've been considering buying one of those China Glass Bubble Cap columns with 4 or 5 Bubble Cap Plates. I would likely build my own dephlegmator. I recently saw a video where a guy tried using bubble caps for the first time and he was shocked as to how much additional flavor carried over as a result. Is this true? I thought that each plate gives you higher ABV which should effectively produce less flavor.
