Aging in a small wooden keg

I am aging some french brandy made with neutral spirits and still spirits essence in a 2litre wooden keg

The taste is improving with age , if I leave it alone long enough , but keep topping it up .

How much would I be loosing in the angels share

However much you have to add to top it off.
It is the very things that we think we know, that keep us from learning what we should know.

I quit worrying about that stuff a little while ago, it really came home to me on the w'end though when i sloshed 3 or 4 litres of 60% out of my reflux jar into my olive drum fermenters and stuck the household mop (bourbon girl wasn't watching) in to slosh it all around and cut through the olive oil, then tipped it out onto the compost :mrgreen: :mrgreen:

It's just so meaningless the quantities nowadays 8)
