Ground Corn ideas?

I recently bought a corn grinder. I can take my 50lb bag of corn and make cornmeal and even corn flour. My wife rolled her eyes when I told her it is mainly for "baking".... Any good ideas on what to make? I have found a good corn tortilla recipe that I will try. But sure would love a second opinion.

Chowder
Piggies in a blanket: like cornbread with sausages baked in
Polenta: an Italian corn patty that can be dressed with pasta sauce, pesto or almost any thick savory sauce you can imagine
Good old chiili n cornbread
Muffins
Dumplings
Coating for crispy fried chicken, chops, or fish
Multigrain bread
I'm forgetting something....um...

Chicken and dumplings. Feed the chickens your spent grains, make dumplings from the flour. It don’t take a Ph’d to study economics.

Corn pancakes with real maple syrup, and if you got a press, corn tortillas. Nothin' like 'em fresh off the girdle.

I made corn cake this weekend. Followed a basic recipe and it had good flavor. Next time I'll add more sugar, I like it more of a cake and not bread, and not over cook. This one turned out a bit dry and I think I just left in in the oven too long.
