Good stuff, I have only made a little bit of wine, but this explains why my white table wine ended so dry with Lavlin C.

For wine I carry out a spontaneous fermentation (made by generations here). The article does not surprise me, I mentioned the bayanus strain many times for blocked fermentations, difficult conditions and sugar washes but if you were to use a yeast for wine I would evaluate the aromatic profile first of all based on the grapes, the bayanus is quite neutral And it does not characterize wine.
