Lemon Garlic Shrimp Kabob

Just made this dinner tonight as I wanted to cook shrimp but didn’t want to BBQ outside. Turned out really good but added a little more salt after as to cut the lemon flavor a bit.

Lemon Garlic Shrimp Kabob
INGREDIENTS:
* 1 1/2 pounds medium shrimp, peeled and deveined
* 4 lemons, thinly sliced and halved
* Kosher salt and freshly ground black pepper, to taste
* 1/4 cup unsalted butter, melted
* 1/4 cup freshly squeezed lemon juice
* 4 cloves garlic, minced
* 1/2 teaspoon dried oregano
* 1/2 teaspoon dried thyme
* 1/2 teaspoon dried basil
* 2 tablespoons chopped fresh parsley leaves
DIRECTIONS:
1. Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
2. Thread shrimp and lemon halves onto skewers. Place skewers onto the prepared baking sheet. Place into oven and roast just until pink, firm and cooked through, about 5-7 minutes.*
3. Melt butter in a medium skillet over medium high heat. Stir in lemon juice, garlic, oregano, thyme and basil until fragrant, about 2 minutes; season with salt and pepper, to taste.
4. Serve shrimp skewers immediately, brushed with butter mixture and garnished with parsley, if desired.

If I do one thing this Christmas it will be an outside BBQ once weather (no rain is the only condition) allows. This looks like a very tasty dish and will try it. Always had an issue doing shrimp alongside the meat, this should solve it. Thanks.

I always Sautee on the stove in lots of butter and garlic, then sprinkle lemon pepper on them once done. I'll have to try it your way.
It is hard to imagine a more stupid or more dangerous way of making decisions than by putting those decisions in the hands of people who pay no price for being wrong.
