Lemon brandy

Post by Dcastor »

Does anyone have a recipe for lemon brandy. Using either fresh lemons or lemon juice or a combination of the 2. Wife loves lemon drop cocktails and thought I might save some steps along the way. Thanks

One thing I can do is dip lemons in your alcohol (whole or peel only) .. the flavors reside in the peel, I would exclude the juice.

Try searching for limoncello recipes. That is a lemon spirit that can be made in any range of sweetness and would only require an ice shaker and sugar rimmed glass to complete your lemon drop.

Most are simple recipes that can be made in a day if you already have the neutral spirits on hand.

Good luck. Otis

While your awaiting answers you might consider cheating. Try a shortcut that creates an intensive flavored schnapps in just a day.

First you start with a raw neutral spirit that has been cut to a determined high proof. Then fill an empty bottle ½ to ¾ full with “Lemonhead” brand lemon beeds. Pour in enough neutral to cover the candy, but leave enough empty space in the bottle, so that when shaking – the liquor can strike the candy's surface hard; causing quicker erosion. Shake several times throuhout the day. Once the yellow tinted outer layers dissolve away and the inner white taffy cores begin to show; then separate and toss that sugar candy out. Now fill the bottle completely with neutral.

This strong and bitter schnapps will command respect. It bites back, like Goldschläger or Rumplemintz.

Tried whole lemons, difficult to get the lemons covered in neutral.

If you do use only the peel, make sure you remove all the pith. The pith will make your liquor bitter.

As an aside, in the cottage liquor industry here in Coogee, this is called "taking the pith". :D
Taking a break while I get a new still completed....

Any lemon brandy you make will be minus the acidity needed for your wife's cocktail, so there might not be an easy brandy shortcut.
