How will this setup perform?

This will be my fist equipment and don't want to under/over do anything by too much. Does this sound like a somewhat balanced setup?
8 gal milk can doing 5 gal runs
3" copper pot head to a Liebig (or would 2" be more appropriate for this application)
1500w element (<15 amps)
