Apple Pie question

Hello HD,
I've got this apple brandy mash that I'm doing a stripping run on at the moment. It's made from 4,5 kg very nice apples and 4,5L apple juice made from concentrate and then water and 1 kilo of sugar.
I've been dreaming a bit about making Apple Pie and I was wondering if I can use this run to make it or if I have to use my neutral spirit from sugar mash. Is there any written or unwritten rules on this subject? :lol:

You can use apple brandy and it will be flavored apple brandy. If you use pure neutral then the only flavor you'll have is with what you add to flavor it. There are a lot of different apple pie recipes. Some start with apple cider, spices and add liquor whether neutral or not. When in doubt, just make a small batch different ways and see which way you prefer.

Thanks a lot, I will try making some small batches and see what it tastes like. Will probably get back to this tread and tell about my experience when I've done it.
