How to harvest corn/maize for seed

One of the NZ supermarket chains has recently finished its annual "Little Garden" promotion and I have three (3) sweetcorn kernels with instructions on how to plant and grow them.

How do you harvest the corn for seed though? I'm going to need to use my first crop as seeds if I want to grow enough corn to mash.

Of course, this might not work and I probably don't have enough sunny garden to grow enough corn, but it will keep me out of trouble for a little while.
