Electric elements or Propane?

I am In the process of building an all copper pot 12gal still, with a thumper and worm. I want to use it in one part of my garage where it can not be seen with the doors open, come winter they will be closed.
I was looking at using elements to heat it, I can go either way propane or electric> electric mainly for safety.
My questions are should I go with one or two elements on a 240V circuit with a controller I will make up? My big concern is I scorching with electric elements.
I plan on making different types of shine while keeping all ingredients in the pot as it is distilling like if I want to make a cherry bounce or peach brandy and yes I would strain it somewhat. Or am I looking at this all wrong? I welcome suggestions and thoughts on this. Thank Captn Jack.
