Flavoring at spirit run using juice/juice concentrates?

Post by Plumberjohn »

Has anyone here used juices in their pot for their spirit run to flavor?
Id like to make what i consider a poor mans peach brandy by flavoring a sugar wash or even a corn run using peach juice in my pot during the spirit run and peach concentrate in my thumper. Its too expensive to ferment a 50gal barrel of juice but 10 gallons of juice in my pot is doable. I was also thinking about using some apple cider the same way.
Any thoughts or experiences?

I've used whole fruit, which would give a similar result. I calculate how much alcohol I would get from the sugar in the fruit and put that amount in the pot with the fruit.

Thank you sir that's very helpful. Experimentation in this hobby is getting expensive. Prices for fruit purees and juice concentrates are thru the roof here and because of the season thats all i have to work with.

I leave a portion of the fruit in the freezer when fermenting the fruit, then blend the low wines with the fruit....not a mega flavor but you get something....typically the most flavor is obtained from steeping the whole fruit into the finished spirit
