Hello from southern Ontario

After a long time in the shadows I have finally joined. I have not distilled anything in quite a while but I have recently found some more available time and $ and decided to give it a try again. I made some upgrades to my still (electric boiler now) and did my cleaning runs and have my first all grain 3 days into its ferment. Thanks to all on this site who have gotten me this far already. Looking forward to gleaning more info in the future.

From a fellow Ontarian from northern Ontario..

Yeah the hobby does require time and funds, that's for sure..

So what part of southern Ontario is home.. there are some good number now in the province..

Wow welcome all you Ontarioians. I grew up in port crew. 20 years on lake Erie. Tour gonna love it here. Welcome 🍻

I currently am running a keg boiler with a 5500w element and scr controller. I have both a pot still with a liebeg and a 2 in bok with double wound condenser with a cold finger in the center. Fermenter is a plywood box with 2in insulation and 100w light bulb controlled by a rainbird temp control. I have done several batches of sweetfeed and several Gen of ujssm and birdwatchers for my cleaning runs. My first and currently fermenting all grain was done using high temp emsymes and powder gluco. Seems to have converted pretty good and is bubbling away.

You're on a good start..

Milling the grains to corn meal/flour size will give the best conversion, along with the proper enzymes..

You mean a fermenting cabinet.. not physical fermenting in a plywood box..

Correct. Large bin inside the box. And yes I twice ground the cracked corn,rye,and red winter wheat thru a hand grinder with a drill attached. Got a little gooey for a sec but the high temp enzymes took care of that in no time.

I'm a bit north a some a ya, but on the 'wrong' side of the border. Often, we figure we're closer to y'all than some others way south of us. Anyway, back to the topic at hand: Great that you've already got an AG on the yeast, and are hooked up with temp control. I smell a beer brewer...
